(SPOT.ph) When you think of Thai food, pad thai is likely one of the first things that comes to mind—and for good reason. The stir-fried noodle dish hits the spot with its punchy and flavorful profile, and it's great with just about any kind of protein imaginable: Chicken, seafood, tofu, and so on. Even in its basic form, it's great—but we recently got to try a version that takes classic pad thai over the top with the addition of crispy, savory pieces of chicken skin. Also dubbed Pad Thai Gai, The Pad by Samyan's Chicken Pad Thai (P320/solo, P1,100/potluck) has al-dente rice noodles with a happy balance between savory, sweet, sour, and slightly spicy profiles—as is characteristic of any good Thai dish. (You can brighten the flavor further with a squeeze of the lime wedge included.) Adding even more taste and textural variety are meaty chicken pieces, fried tofu, crisp bean sprouts, egg, garlic chives, bean sprouts, Thai chili, and crushed peanuts. And then there's the kicker—we're talking about the chicken skin, of course! Surprisingly, instead of making the dish overly indulgent, it adds just the right amount of saltiness and crackly crunch to amp up the mix without taking over.
