(SPOT.ph) What is it about strawberry shortcake that makes it a dessert worth seeking out, time and time again? When done right, it's the kind of sweet treat that isn't too heavy nor too light—the union of strawberries (in their tangy-juicy glory!), cake or biscuits, and billowy cream make for a balanced and creamy-fruity whole that's way more than the sum of its parts. There are a number of places in Manila famed for their takes on the dessert, but we recently got to try one stellar version that totally deserves more love. Meet Malia Home Bakery and their A+ Strawberry Shortcake.

Here's why this under-the-radar strawberry shortcake deserves your attention:

Appearance-wise, the Malia Home Bakery's Strawberry Shortcake bears a light-pink exterior of berry-tinged whipped cream with old-fashioned ruffles around the edges, plus fresh strawberry halves on top. It's stunning in its very simplicity, and we say it's definitely IG-worthy. But flavor is where is at and this cake definitely delivers.

There's the whipped cream, for starters, which is right smack dab being creamy and tangy with just a touch of sweetness without taking over. It's rightfully billowy and airy, so much so that it dissolves like a cloud on the tongue. This airiness is also mirrored in the cake part of the equation: A light and just-rich-enough sponge or chiffon that jiggles as you slice, and matches the delicate character of the cream just about perfectly.

Completing the trio are slices of fresh strawberries (along with more of that berry-tinged cream) in between the cake layers, adding pops of tartness and juiciness that keeps each slice vibrant and refreshing. Every element is executed beautifully, and they come together like pieces of a puzzle, with each part expressing its own distinct characteristic while bringing out the best of its accompaniments.
