(SPOT.ph) Spiced and stick-to-your-ribs hearty, curries are a comfort classic with variations all around the globe. Thailand in particular makes curries that are typically brighter and zingier in flavor than other versions—and we recently got to try a version of the dish that blew us away not just for its tantalizing taste, but also its use of a premium fish with an especially rich character. By that, we're talking about no other than the Salmon Curry of online venture Made in Bangkok!

We've raved about Made in Bangkok's stellar Thai fare that are given modern spins, and they recently introduced new seafood dishes that showcase great-quality creatures of the sea in fresh and flavorful ways. The Salmon Curry (P690/bowl, P1,360/tray) is one of the homier ones in the lineup—yet it catches your attention with its intoxicating aroma that comes out the moment you open the tupperware lid.
The Salmon Curry's glossy red-curry sauce boasts a striking color as vibrant as its spiced-tangy-zingy-creamy-fiery taste. (That was a lot of adjectives yes, but it all comes together for a mighty flavor punch.) And then you've got the star of the show: a thick fillet of rich, fatty salmon, cooked so right that it has a touch of flakiness to the edges but still melts in the mouth. Together with cherry tomatoes and chunks of pomelo, everything comes together to make for uber-flavorful spoonfuls—especially when served with the coconut rice that's served alongside.
Of course, that's far from the only thing Made in Bangkok's got under their sleeves. Also on their seafood menu is the Prawn Pomelo Salad (P480), a party-in-a-bowl (er, tray) situation that combines fresh poached prawns, juicy chunks of Davao pomelo, crisp fresh greens, fried shallots, and a zesty lime-coconut dressing. On the sweet-and-spicy end of the spectrum you'll find the Sweet Chili Tiger Prawns (P720), where jumbo tiger prawns and basil are fried to a subtle crisp then given a toss in a sweet chili sauce.
Complete the party with the Crispy Prawn Cakes (P430), or fried cakes of finely chopped, tom yum paste-imbued prawns served with cucumber sweet chili and Thai nam phrik sauces, and you'll be in for the Thai-style seafood shindig of a lifetime.
