You won’t find run-of-the-mill croissants or turnovers at this bakeshop. Honeybee Patisserie is all about Japanese-inspired cakes and pastries, with baked treats sporting names such as Mt. Fuji Choco, Tokyo Tiramisu, Tonkatsu and Hash Potato Roll and Takoyaki Bread.
According to owner and professional baker Aileen Tan, customers have been making a beeline for the Tokyo Tiramisu, a cake with a Japanese twist to the classic tiramisu recipe. Equally popular is the Matcha Cappuccino, a combination of matcha green tea and coffee espresso flavors. "One of our best-selling breads is the Takoyaki Bread, a bread version of the famous takoyaki ball filled with octopus and takoyaki sauce. Another bestseller is the Hokkaido raisin loaf," adds Tan.
The pastries at Honeybee use sweet, flaky bread and it’s not rare to see the display cases almost empty at the end of the day. Tan shares they also have ten standard cakes which can have birthday greetings, upon the customer’s request.
Opened in March 2011, the patisserie occupies a small space in the Greenhills branch of Bubble Tea and is open as early as 6 a.m. daily so early-morning customers can opt to have their cup of coffee with an array of tempting treats from Honey Bee’s display window.
