Famed Filipino food purveyor and innovator Myrna Segismundo plays guest chef at EDSA Shangri-la’s Heat this month, and not without a couple of delicious tricks up her sleeve.
The Restaurant 9501 director and Kulinarya author famous for her signature adobo pâté brings exciting new dishes to the restaurant's buffet spread-ones that put a modern twist to classic Pinoy fare. Segismundo's version of tokwa't baboy, for instance, offers a completely new take on the pulutan favorite with a refreshing mix of cold tofu and pork bits served ceviche-style. The "Kini-haw," grilled tuna kinilaw in coconut cream with garlic tomato-onion coriander salsa, flaunts pretty pink stacks of juicy tuna skewered on a stick.
The bagoong paella is a riot of flavors-the shrimp-paste flavored rice topped with pork, salted egg and mango strips is a full meal on its own. She also makes a mean estofadong baboy, a homey, sweet-savory specialty with tender pork pieces encased in a buttery pie shell. If you're big on meat-eating, Segismundo has a perfectly cooked slab of flavor-packed roast beef adobo waiting to be torn apart and devoured; for pseudo-vegetarians (the fish-eating kind), there's seafood kare-kare.
Leave some space for another Segismundo specialty post-main course-her queso de bola cheesecake flaunts the kind of cheese that commands your attention, and a well-buttered crust to go with it.
Segismundo's menu is available for lunch and dinner from July 22 to 31, 2011.
