(SPOT.ph) At first glance, there's nothing daunting about it. Suckling pig slow-roasted and crispened to perfection, Cochinillo asado may be Castilian in origin, but it’s very familiar to the local palate. The month-old pig, which is decidedly crisper and juicier than lechon, contains layers of tender meat, soft fat, and wafer-thin browned skin contributing to a delectable gustatory experience. Despite its simplicity and the comfort it brings, however, cochinillo whether in Spain or in the Philippines is deadly-sinfully gastronomic and dangerously addicting.
22 Prime's cochinillo is all that and more. It’s as delicious as they come, perhaps even a shade or two better than others. With arguably enough in one serving for two, the cochinillo, which lies on a bed of rosemary and thyme, comes with a side of mushroom, asparagus and garlic-roasted potatoes. A saucer of homemade peach chutney spiked with a dash of cayenne pepper provides a delicately sweet contrast to the otherwise weighty flavors.
For an indefinite period of time, 22 Prime is adding the conspicuously pork cochinillo to their roster of steak dishes in a three-course set menu for P1,850. Warming up the appetite is the freshly stewed Spanish Garlic and Pimenton Soup. Rich yet strangely light, this starter is seasoned using the bones of the suckling pig. For dessert, a sampler of available cakes and mousses. A glass of white wine is also recommended to highlight the flavors of the meal.
