La Regalade pairs new culinary creations with San Miguel Beer

(SPOT.ph) Gone are the days when beer was known only as a go-to drink for bar-goers who often paired it with pizza, fries, chips, and other greasy bar chow. These days, however, the Pinoy-favorite has also been known to enjoy the company of haute cuisine. Case in point: La Regalade French Bistro. The Makati haunt recently conducted ab eer pairing helmed by executive sous chef Karen Martin, who created a gourmet menu to match several kinds of San Miguel Beer with unlikely partners: salad, fish, lamb, even chocolate.
"Filipinos I would say are more beer drinkers than wine drinkers due to several factors," Martin, who trained under the restaurant’s Michelin-starred head chef Alain Raye, said. "Number one would be the fact that we are living in a tropical country and it is but natural that we opt for a refreshing and invigorating type of beverage. I think that a deeply thought of and a harmoniously paired beer with food is a great way to serve a meal," Martin said.
Martin prepared an elaborate six courses, pairing each dish with either San Miguel Premium All-Malt, San Miguel Super Dry, or Cerveza Negra. The smooth, full-flavored Cerveza Negra created a nice contrast to the subtle saltiness of Martin’s Fried Goat Cheese and Spinach salad while the flavorful Snapper with Rosemary Butter was perfectly evened out by the slight tanginess of San Miguel Premium All Malt. For the main course, Martin made Lamb Navarin with Couscous with a surprising spiciness that was nicely countered by the lightly bitter San Miguel Super Dry. Even the chocolate dessert was served with a beer match: Cerveza Negra.
