(SPOT.ph) You can't do without tradition in Chinese cuisine (or any cuisine for that matter!), but there's also plenty of room for going the modern route—an art Hong Kong-born chef Jereme Leung has just about perfected. In the Philippines, Leung is best known as the brain behind at China Blue in Conrad Manila, and the chef himself will be flying back to our shores next week and cooking up exclusive dishes you can try at the hotel restaurant!

Here's what you can look forward to next week as Chef Jerome Leung visits Conrad Manila:
Chef Jereme Leung presents a special set menu available at China Blue from July 18 to 23, as part of the hotel's Legendary Chef series. They're ticking all the right boxes as far as the food lineup goes, as Leung is serving everything from lobster (marinated and amped up by a coriander lime jelly dressing and crispy bean curd sheet), sea cucumber (with black chicken in a dumpling paired with a double-boiled merry fruit peach gum and dry moon clam Matsutake mushroom soup), sea garoupa (steamed and accented by sun-dried ginger, red chili black bean
paste, and superior chicken stock), and beef short ribs (slow-cooked and coated in green pepper barbecue sauce).
Of course it also comes with fried rice—not just any fried rice, but one studded with dried scallops and spring-onion egg-white pearls—as well as hawthorn ice cream with Chinese sweet vinegar caramel and onion pancakes as a savory-sweet dessert. Seats go for P6,588 a person; you'll want to book your reservations stat as slots are highly limited! China Blue is open for lunch from 11 a.m. to 2:30 p.m., and for dinner from 6 to 10 p.m.
Chef Leung's visit is one to be highly excited about as he boasts quite the impressive resume, having worked in the kitchens and/or opening restaurants in China, Indonesia, Singapore, and more. His food's earned the praise of no less than Nina
and Tim Zagat of the renowned Zagat Survey, as well as restaurant reviewer Patricia Wells of the International Herald Tribune. The chef's also been bestowed globally acclaimed awards—among them the Star Diamond Award by the American Academy of Hospitality Science, the XO Hennessy Culinary Award in Malaysia, and the Rising Chef of the Year award during the World Gourmet Summit Awards of Excellence 2001 in Singapore.
China Blue first opened in Conrad Manila in 2016, serving dishes that had us seeing Chinese flavors in a new light.
