The Filipino soup was born in the district of La Paz after all, and today can be found everywhere from the streets to fancier establishments in the city. We'll always have a soft spot for the everyday versions on the streets—but it's also worth exploring the ways it can be remixed and reimagined. Case in point: the one-of-a-kind version served at Courtyard by Marriott's Runway Kitchen, served in the shell of a young coconut.
Runway Kitchen's Executive Chef Bonn Reyes sought to highlight the prevalence of coconut trees in the Philippines—hence the idea to use the buko shell as a vessel to hold the soothing soup of pork meat and offal.
