From Baguio to Manila: Rebel Bakehouse Is Popping Up at Greenbelt, Makati

(SPOT.ph) Baguio's Rebel Bakehouse has been holding pop-ups in Metro Manila for quite some time now and, more often than not, the days end with their displays emptied of their golden brow, flaky, freshly-baked pastries. For their latest pop-up however, they're staying for a longer time in Metro Manila—and partnering Yardstick Coffee for the perfect pairing of pastries and cups of joe.

Rebel Bakehouse just announced their new pop-up, and it's relatively longer than their usual weekend stints. This time around, they're at Greenbelt 3's cinema area for three months and a half, sharing a cozy space with Yardstick. The two shops are no strangers to each other as they've had previous collaborations, but unlike your past situationships, the two have always had great chemistry with each other.

Coffee and croissants? We dare you to name a better couple than that.

On the beverage menu, you have the Yardstick favorites, but there are also three pop-up drink exclusives. Try the Breakfast of Champions (price starts at P195) which has espresso, oat milk, and peanut butter cream if you like it nutty; there's also the &Soda (price starts at P210) which is soda with your choice of either coffee or matcha—perfect on a hot day. And THEN there's the Lemon & Lime Soda (price starts at P190) which is a non-caffeinated refreshing soda—think a fizzy lemonade!

If you're wondering why there are soda options for a coffee shop, BJ Abesamis, co-owner of Rebel Bakehouse, says "[The soda] is a nod to the movie behavior of ordering a soda with your snack. Most of our coffee drinks are milk-based, and these offer a different option and they pair well with Rebel's savory bakes."

In the same vein that Yardstick brought their bestsellers, Rebel Bakehouse bakes their crowd-favorite croissants daily for the special collaboration. The pop-up exclusive bite is the Golden Ticket Pain Suisse (P240) which is a bi-color Pain Suisse with alternating butter dough and red-tinted dough, coffee custard with almond frangipane, and the half is dipped in Callebaut milk chocolate and finished off with a dust of Yardstick's Golden Ticket coffee beans.

While, yes, you have weeks and months to go before the pop-up closes, there is a possibility of Rebel Bakeshop and Yardstick's relationship going long-term. "If the pop-up goes well, this might turn into something more permanent. Only time will tell," BJ teases. While plans are still uncertain, what we're sure about is that you should be at the pop-up early—before 4 p.m. to be safest—if you don't want to run out of the pastries to pair with your drink.

You can find the pop-up on the fourth floor of Greenbelt 3. It's open Monday to Friday, from 11 a.m. to 9 p.m.,  and Saturday to Sunday, from 11 a.m. to 10 p.m., until June 1.
