(SPOT.ph) You might have seen photos and videos of folks noshing on lightly breaded beef cutlets with a perfectly pink center. We're talking about the Japanese dish called gyukatsu of course—and given its drool-worthy combo of a a crisp exterior and juicy meat interior, we wouldn't blame you if this has you yearning for one yourself. Lucky for you, there's no need to fly to the Land of the Rising Sun as Japanese chain Gyukatsu Kyoto Katsugyu recently opened in the SM Mall of Asia. But what about Northies? Do we really need to head all the way to Pasay to get our fill?
Well, starting this December, those from the North will have their own spot to sate their gyukatsu hankering as the Japan-famous Gyukatsu Kyoto Katugyu is headed to Quezon City.

Our Japanese food-loving hearts thumped wildly after we spotted Gyukatsu Kyoto Katsugyu's board up on the second floor of SM North Edsa's City Center.
Not much is known about the new branch except that it will open sometime in December, just in time for Christmas. So, if you're a Northie craving gyukatsu right now, you'll have to make your way to their branch in SM Mall of Asia for now.
ICYDK, gyukatsu is the lovechild of your typical steak and the Japanese fave, tonkatsu. But unlike tonkatsu—which is made with a pork cutlet that's deep-fried and cooked all the way through—gyukatsu is made from a beef cutlet often left rare in the center. If eating beef rare isn't to your liking, gyukatsu joints typically have stone grills for each diner where they could further cook their beef cutlets to medium or medium rare.
Gyukatsu Kyoto Katsugyu is famous for its melt-in-your-mouth gyukatsu. This is mostly because they follow three strict rules to ensure the quality of their eats. The first rule is to use only premium beef, which brings out the best taste.
The second is using extra refined panko—10 times thinner than the regular— to lock in the moisture and flavor. Lastly, all gyukatsu must be cooked to a perfect medium rare, and this is done by frying in high temperatures for a short duration. Following these three pillars ensures maximum umami and juiciness for every serving.
Gyukatsu Kyoto Katsugyu opened in 2014 in the Ponto-chō district in Kyoto—a historical district in the area notoriously competitive for restaurants. Today, Gyukatsu Kyoto Katsugyu's first Philippine branch is under soft opening in the SM Mall of Asia. Aside from the Philippines, The brand has branches outside Japan in Korea, Taiwan, Canada, Hong Kong, and Thailand.
