Makati’s Salcedo Village has changed a lot in the past decade or so. Its streets are lined with hip new restaurants featuring every cuisine and aesthetic, and randomly, all sorts of light features. While we appreciate the opportunity to try something new with every visit to the area – and taking a pic with a cool lamp – there is one restaurant we’d gladly come home to: Pablo Bistro.

This cozy haunt has earned itself the name “little Spain of Salcedo” and for good reason. With hearty, authentic eats, and charming interiors, Pablo’s deserves the moniker.

You can always gauge a Spanish restaurant by their cochinillo – and yes, Pablo’s proves they’re at par with restaurants back in the iberian peninsula (maybe even better than some). Depending on how many are in your party, or how hungry you all are, you can order a quarter Cochinillo (1 kg) for P4,000 or a whole one for ₱15,500 (6kg). With tender melt-in-your-mouth fat and crisp roasted skin, there’s no beating this one in the contest for simple yet indulgent eats.

Rib-Eye Bone-In Txuleton

Another showstopper is their Rib-Eye Bone-In Txuleton (P7,500), a whole 1-kilogram slab of it. Txuleton means “large steak” in Spanish and it is a very fitting name indeed. This tender cut is grilled to perfection, made perfectly succulent with a little edge thanks to char, and served with sides. Pablo’s does justice to the well-loved art of grilling with this dish.

For something on the lighter side of things, the Grilled Tuna Belly (P750) is a must. Firm and buttery tuna is perfectly grilled and glazed with a bright kaffir lime glaze, lending it both sweetness and a hint of citrus. Served with sauteéd veggies and roasted cherry tomatoes, this plate tastes as good as it looks.
