(SPOT.ph) Perhaps one of the best things to come out of Instagram is Instagram-based bakeries—it's great to see how the social media platform developed from shots of what your friends had for lunch to pretty displays of cakes and cookies you can actually get your hands on. There are some real gems on the app, including Ollie's Kitchen, which found a spot on our list of the Top 10 Chocolate Chip Cookies in Manila.
For March, pastry purveyor Oliver Isidro brings back the Champorado Cookie, and this time it's here to stay! Made with locally sourced chocolate, puffed rice, and Pangasinan salt and—get this—topped with golden tuyo flakes, it's certainly a luxurious take on the humble cookie. It also comes in two sizes, going for P600 for a box of six 52-gram cookies, and P800 for the 500-gram cookie—that's pretty much the size of a cake!
It seems that this once-seasonal dessert has come from a slow but steady timeline of experimentation; the first time Ollie's Kitchen rolled out a champorado-inspired cookie (entirely different) was in 2017. Since then, the cookie's evolved from its first iteration with a tablea base and dots of pastillas de leche, to a recent collaboration with Auro Chocolate, sporting its current look.
