(SPOT.ph) For some people, coffee is just a means to get some caffeine in to survive a work day after a sleepless night—but for many other people, like Cube Coffee’s Joey Chua, it goes way beyond that. Chua has long had a love for coffee—both the process of making it and consuming it. With the goal of passing this on to other coffee lovers, she and her partners established the café in 2017 and it has since become a laid-back hangout for coffeeheads in the Quezon City area.

“We wanted to help spread good coffee to more people, inspired by our masters who had trained us and discover this journey that to us is a beautiful one,” says Chua in an exchange with SPOT.ph. “You’d see the passion in the eyes of those who love to brew and drink coffee and you’d want to see more of that in the community, so Cube Coffee [was] born. There’s pure joy when you hear [coffee lovers] talk about coffee [and] we want to add value to more people in small ways that we can. It's a personal story that we learned a lot about coffee and found that really good cup of coffee that we wanted to share with others.”

Located along E. Rodriguez Avenue, Cube Coffee goes for a minimalist look with white walls and warm wooden tones all around. “We love the minimalist concept of Japan [when] we visited the cafés there,” says Chua. “We loved the vibe in Japan and Taiwan where you can find a scenic café in the heart of the city.” After all, the two countries are known for their many coffee shops—and Chua describes these as “magical stops” where people can be calm and be inspired by coffee.

Their architects were thankfully able to capture the Japanese-meets-Nordic vibe they were going for. “The window wall is designed with frames, modern-style, [and] we wanted something that people can see through from the outside but not give away everything all at once,” says Chua. True enough, you’ll find plenty of glass windows that allow the sunlight to peek in. There are also fun color accents from the small details like plants stationed at selected tables, knickknacks like nanoblocks of favorite characters and items collected from Japan inside their shelves, as well as the books you’ll find right behind the counter.

Cube gets its moniker in part for their boxed space and logo, but also for how “cube” as an acronym stands for Coffee Using Brewers and Espresso. “We wanted to showcase both espresso-based and filter coffee, [i.e.] hand-drip coffee or pourover,” says Chua.

Their menu includes the essential classic espresso-based drinks, including The Long Black (P110/hot, P125/cold) and Cube Caffé Mocha (P165/hot, P180/cold). But you can also find more fun beverages like flavored lattes—some of which are the Macadamia Latte (P165/hot, P180/cold), Lavender Latte (P165/hot, P180/cold). Some unconventional but must-try drinks on their menu are Rosemary Latte (P165/hot, P180/cold), which ingeniously pairs coffee with the herb—and the Iced Coconut Latte (P185), which gets its creaminess from coconut milk.

Cube is also a multi-roaster—they carry and showcase different beans from different roasters at any given time. “We source our Arabica beans from our local roasters who source the beans internationally and locally as well,” says Chua. These beans come from African countries like Ethiopia, Kenya, Rwanda and Central; and South American countries like Brazil, Colombia, Costa Rica, and El Salvador. They also carry local beans sourced from Benguet and Mt. Apo beans from Davao. “We intend to offer a variety of beans featuring more local roasters in the country,” says Chua.

You can try some of the available coffee beans through their filter coffee options, which include the Filter Coffee (P165) a.k.a. hot pourover coffee brewed on different drippers, or the Flash Brew (P180) or Japanese-style filter coffee on ice. As of writing, their featured beans include the Colombia Cauca 2415 roasted by The Good Cup Coffee Company, Finca Hartmann (Panama) roasted by El Kapitan Coffee, and Golden Ticket roasted by Yardstick Coffee.

Plus, you can pick up everything from whole coffee beans, coffee brewing materials, and other merchandise at Cube Coffee. In the future, Chua shares that they also hope to give out basic workshops and courses for fellow coffee enthusiasts. Cube is more than just a café—it’s a hub where everyone who shares the love for a good cup of joe can unite.
