The earthy taste of mushrooms makes for a great pair to the brininess of anchovies—and you can try the tandem together with creamy ricotta to boot in the Shrooms, Ricotta, & Anchovy (starts at P420/nine inches). For a more Mediterranean-leaning pie with a welcome hint of umami, go for the Garlic, Shiitake, & Tomato (starts at P420/nine inches), which pairs their tangy tomato sauce and garlic with shiitake mushrooms that contribute their distinct deeply savory taste to the mix. Both flavors come with shredded romaine lettuce in place of the classic arugula-plus-alfalfa combo—and though the lettuce is on the more neutral end of the flavor spectrum, you nevertheless get a fresh-meets-crisp bite that evens out the stronger-tasting pizzas beautifully.
