This longtime Spot.ph fave (starts at P1,600/small) isn’t the easiest to order; Baby Yulo doesn’t have an official social media page, so you’ll have to go the old-school landline route and have the cake picked up at North Forbes, Makati. But it’s well worth the effort; one spoonful will let you see why it continues to be so dang well-loved. It’s got an exterior of light-pink strawberry cream with visible berry specks, an interior of what seems to be chiffon cake with the distinct (but not overpowering) richness of egg yolks. When served frozen or semi-frozen, the cream takes on a rich and velvety consistency that’s not unlike semifreddo or strawberry ice cream—but it’s also excellent thawed, as the cream softens into a billowy, airy chantilly cream of sorts.
