Metiz + Toyo Eatery Hailed Among Asia's 50 Best Restaurants of 2023

(SPOT.ph) Filipino culinary talent once again shines bright. Yup, Asia's 50 Best Restaurants just announced their 2023 roster—which includes Makati establishments Toyo Eatery and Metiz.

These local restaurants are part of the list of Asia's 50 Best Restaurants for 2023:

New on the list (specifically on the 48th spot!) this year is Metiz, the "neo bistro" in Makati's Karrivin Plaza famed for the clever, eye-opening ways of shining the spotlight on local ingredients. The Chef Stephan Duhesme-helmed degustation spot employs Philippine produce and meats, making use of fermentation where applicable (their shelf of in-house ferments is quite the breathtaking sight) and going playful with their flavor combos. 

The result: sublime courses that are familiar in some ways and novel in others, making for a mind-blowing multicourse meal from start to finish. Star plates from a recent visit include the fresh and zingy tofu plate with fermented pineapple, beach letuce, lacto vegetables, and fresh leaves on sourdough lumpia; the buro't mustasa-esque aged tanigue with fermented rice and mushrooms, a red-rice sauce, and a sawsawan of compressed talinum; and the especially tender aged Zambales pork course paired with a pork and clam sauce, kalabasa flowers, and fermented carrot ketchup.

Toyo Eatery (also Metiz' own Karrivin Plaza neighbor!)—listed 94th in 2022, 49th in 2021, 44th in 2020, and 43rd in 2019—happily makes it to the 2023 list as well, now on the 42nd spot. Known for their contemporary takes on Filipino fare, this establishment takes on Filipino classics their own way, taking a page from both tradition and innovation.
