(SPOT.ph) Halo-halo is a classic Filipino summer icy dessert that has no fixed anatomy. In fact, there are many versions of halo-halo in the Philippines that use different ingredients. Plus, this icy dessert has similarities with other icy desserts from neighboring countries like South Korea's bingsu and Japan's kakigori.
In the province of Laguna, they have a one-of-a-kind halo-halo—the kind that either excites you or sends shivers down your spine (pun intended). If you're the former, you've gotta visit Ben's Halo-Halo Ice Cream to try the one-of-a-kind Spicy Winter and Salty Summer topped with chili and salted egg, respectively.

Ben's Halo-Halo Ice Cream shop offers unique salty and spicy toppings
Beng's Halo-Halo Ice Cream is an institution in San Pablo, Laguna, claiming they have the "creamiest halo-halo" in the entire province of Laguna since opening shop in 2013. The shop is known for its no-frills, no-fuss takes on halo-halo, but the Spicy Winter and Salty Winter are one of the trendier flavors that continue to bring in new and old customers because of their novel twist on the classic dessert.
Similar to the famous sili ice cream of Bicol, the Spicy Winter (P110) plays around with the spicy-sweet combination. This specific dessert is topped with chopped chilis and a sprinkle of chili powder that adds a lingering, burning sensation that counters the sweetness and coldness of the dessert.
We're guessing the Salty Summer (P115) was created as an experiment on the salted egg trend that they stuck with, or a way of banking on FIlipino's unwavering love for sweet-salty desserts like salted caramel. Or it could be both—either way, this dessert uses its classic halo-halo as its base but with a slice of salted egg on top that is meant to be mixed with the dessert—not eaten on its own.
While we did say halo-halo has no fixed recipe or structure, Ben's Halo-Halo Ice Cream does—and this is what gives their halo-halo its unique identity. In all of their halo-halo variants, there's a thick creamy mixture, reminiscent of ice cream, in between the finely-shaved ice. This ice cream is served in lieu of the evaporated milk that other halo-halo stores commonly offer.
Ready to dig in? You don't need to drive all the way to San Pablo, Laguna if curiosity has taken the best of you. Ben's Halo-Halo Ice Cream has many branches all over and outside Metro Manila.
