Drop By Taqueria Franco for Feisty Thai Tacos by Chefs Nicco Santos + Quenee Vilar This August

(SPOT.ph) Called the "real" national dish of Thailand, pad krapow is found everywhere from carts on the streets to high-end dining spots—and for a limited time, you'll find it in between Taqueria Franco's nutty buckwheat tortillas. The Salcedo Village joint is serving a special dish by Sambar's chefs Nicco Santos and Quenee Vilar that melds the feisty, herby, subtly spicy soul of Thailand's stir-fried meat dish with the raunchy, drippy, hands-on fun of tacos, and the result is nothing short of sublime.

Visit Taqueria Franco for Sambar's Chicken Krapow Tacos

Having helmed the kitchens of Your Local, Hey Handsome, and Restaurant Aurora (and soon, Restaurant Celera—watch this space), Santos and Vilar know a very good thing about Asian cuisines and this is evident in the spunky Chicken Krapow Tacos (P400). These handheld explosives get their pungy-pungent profile from fillings of stir-fried chicken, nuoc cham, basil, and lacey strands of Thai fried egg that add a subtle crunch to the mix. Though great as is, they're even better with lashings of the nuoc cham salsa on the side; feel free to crunch on the cucumbers in between bites to balance out the tacos' boldness. You'll want to rush and get your fill while you can, though, as they'll only be available 'til August 31.

This is just the first edition of Taqueria Franco's #FRIENDSofFRANCOandFRIENDS series, where the taco spot will be joining forces with fellow chefs and artists from other creative industries. Let's just say there's lots more where that came from.

Taqueria Franco is a homegrown taco spot where Robuchon-trained chef Miko Calo takes on tacos, her decidedly untraditional, French-inspired way. The dining spot opened in 2023 and was part of SPOT.ph's 50 Great Restaurants list that year.
