(SPOT.ph) Small and independent purveyors were the reigning champ during the pandemic, and we definitely had our share of standout lockdown food finds that continue to be some of our faves to this day. Among them is the Mango Shortcake of Sainte Anne Cakes Manila—a dessert we were introduced to in 2020, which blew us away with the stellar execution of the seemingly simple ensemble of mango, cake, and cream. It's become one of our top picks when it comes to mango cakes for this reason; though in its OG form that hardly needs improvement, Sainte Anne's gone on and taken things up a notch anyway. Say howdy to the Mango Bloom Shortcake.

Sainte Anne Cakes Manila is taking their signature mango cake up a notch in this new dessert:
Released in time for Father's Day, the Mango Bloom Shortcake is a mango lover's dream which sends Sainte Anne's famous Mango Shortcake into overdrive. It's got even more mangoes on the outside—think sweet, juicy strips of the fresh fruit adorning the top of the cake (and meticulously arranged to resemble a flower in bloom!), as well as hugging the cake's edges.

It ain't just a looker, either. Beneath the cake's fruity exterior are two layers of chiffon cake that deliver a subtle buttery tinge while being plush and airy; more mango cubes; and lightly sweetened chantilly cream that's billowy as can be. And you can't beat how everything comes together for a perfectly tangy-fruity-creamy whole that's way more than the sum of its parts.

As with pretty much all of Sainte Anne's cakes, this the kind of dessert whose appeal lies not on frills on novelty—but on the use of great-quality ingredients and A+ execution. Each cake goes for P3,200, and orders can be placed via DM on social media. While you're at it, don't forget Sainte Anne Cakes Manila's other specialties—including the equally excellent Strawberry Shortcake (P2,000/special, P2,500/extra special), and the doubly fruity Combi Cake (P3,700) with both mangoes and strawberries.
