In every multicourse meal, their young team brings out the best of local, seasonal ingredients (many grown in their greenhouse and gardens!). Never mind that the private-dining spot's located all the way in Silang, Cavite, some two hours away from Manila; we promise it's all well worth the drive. But what's even better is when you can try their phenomenal cooking without leaving the Metro. Here's your chance, Spotters. Silang House will be popping up at La Vie en Rose in Poblacion, Makati for special dinners to be held on September 13 and 15.

Dubbed Hunter and Gatherer, the two-day event brings Silang House to the semi-hidden dining spot La Vie en Rose, and they've come up with two four-course set menus you can choose from for your slot.
For starters, there's the Hunter set (P3,450/person) that features game and fish. We're talking meaty eats like the Hunter's Stew with Cordilleran kinunday and lamb meatballs; Fresh Catch with snapper made zingy thanks to sesame, ginger, apple, lime, and pinipig; and the Sharpshooter with local Cherry Valley Peking duck breast paired with a goat-cheese walnut tart, blueberry balsamic sauce, and black garlic emulsion. Don't forget the Grains in Chocolate dessert to end, either.
Alternatively, there's the Gatherer set (P2,450/person)—a vegan set menu where the Silang House team showcases their deft hand at bringing out the best of local veggies. The adventure starts with a Mugwort Soup for Divination (with pistachio cream, pumpkin seed gremolata, and sourdough grissini) before progressing to the Beet and Strawberry Salad and an enchanting pasta dish dubbed the Magic Mushrooms. Capping off the meal is the Black Passion dessert, a nutty-fruity number with the flavors of black sesame, passionfruit, pomelo, and tarragon.
Whichever set you choose, we say go and get the cocktail pairing (P1,400) add-on too while you're at it; featured here are a line of libations that make use of Singleton Whisky.
