(SPOT.ph) The world of ramen is a vast one, with the Japanese dish coming in countless variations—and taking to all sorts of flavor profiles. Within the traditional Japanese realm you've got your typical pork, chicken, and/or seafood bases; there's also the choice between going for shio, shoyu, or miso seasonings. Beyond that, though, it also takes well to tastes and elements from other parts of the world. We've seen ramen with Filipino-inspired flavor profiles, for example; now it's the Italian classic known as carbonara's time to shine as Mitsuyado Sei-Men now serves an intriguing Carbonara Tsukemen.

Tsukemen, ICYDK, refers to a deconstructed sort of ramen that has the noodles and a concentrated broth served separately, for you to dip the former into the latter. Like all of Mitsuyado Sei-Men's tsukemen, this cool mashup version has their freshly made noodles cooked to the perfect al-dente, topped with cheese and a souffle-style egg you can break into to allow the runny yolk to flow and coat and enrich every strand of noodle. Then on the side you've got a creamy sauce that you can dip chopstickfuls of the noods into before slurping away—talk about the best of the worlds of the West and the Land of the Rising Sun. You can catch this one-of-a-kind ramen at your nearest Mitsuyado Sei-Men branch; it's great paired with one of their savory sides, like the Spicy Tuna (P260) or Gyoza (P210).
