(SPOT.ph) Increasingly scorching-hot weather aside, we still find our hankerings for ramen—specifically of the made-from-scratch sort from ramen-ya around the city—to be as strong as ever. And while most bowls in these parts rely on meat (often pork or chicken) to get their rich, heady character, one recently launched number we're obsessing over instead highlights the depth of flavor of mushrooms. Spotters, it's about time you acquainted yourself with Ramen Ron's Mushroom Ramen.

This new bowl from ramen shop Ramen Ron hits the spot in more ways than one:

As the name implies, it's all about the natural earthiness and umami of the funghi in Ramen Ron's Mushroom Ramen (P485). This 'shroomy composition begins with a creamy mushroom broth—one that's lighter than your standard tonkotsu broth, but still manages to be satisfyingly rich with its deeply savory taste and velvety feel on the tongue. Served atop ramen noodles (which are thankfully kept al-dente—consider this your sign to not take too long taking photos) are strips of Ramen Ron's tofu chashu, which soak up the broth just a touch that you get juicy, savory-sweet bites.

Fresh bean sprouts and spring onions contribute freshness to the mix, as well as a crisp element to keep things from getting cloying. And then, of course, there's the mushrooms—fried mushrooms (we see shiitake and shimeji variants in our bowl), to be exact, which further bring out the umami of the broth. The result: a most soulful bowl that hits the spot without weighing you down—and that's especially drool-worthy taken with their Vegetarian Mushroom Bun on the side.

Looking to cool down after polishing off your bowl? Ramen Ron's also launched the Chilled Mango Mochi (P135), a mango-tinged variation of their Chilled Milk Mochi with a pillowy soft mochi exterior (made by hand!) that makes way to a lush, mousse-like milk mango filling. Soon to be launched at the restaurant are fellow sweet meal-enders of the Japanese Pudding in a pool of sultry caramel; and the Milk Soft-Serve Ice Cream with Chocolate Sauce that'll have you floating on dreamy dairy clouds.

Initially a delivery-only brand of ramen kits, they finally opened a full-fledged restaurant in Rockwell where old and new fans can slurp up their signatures.

Ramen Ron is at G/F, RS-103, Edades Tower, Amorsolo Drive, Rockwell Center, Makati City. For more information, check out Ramen Ron's Facebook page.
