The Modan x Ramen Ron Collab Brings Together Slurp-Worthy Tsukemen and Japanese Fried Chicken

Chefs Jorge Mendez and Hiroyuki Tamura team up for this umami-rich pairing.

(SPOT.ph) If there's anyone who knows a good thing or two on cooking up Japanese fare with no shortage of soul, it's gotta be Ramen Ron—the homegrown ramen-ya headed by Chef Hiroyuki Tamura of OG shop Ukokkei Ramen Ron. On the more modern end of the spectrum of Japanese cuisine is Mōdan, the neo-Japanese private dining spot helmed by celebrated chef Jorge Mendez. The two are coming together for a champion collab that highlights two well-loved Japanese classics: tsukemen, the ramen variation that has the noodles served separately from a concentrated broth mix for dipping into; and karaage, or Japanese-style fried chicken. Here's the deal on the Ramen Ron x Modan ramen special:

Ramen Ron's Amado Fores shares he's known Mendez for a long time, vouching for the Modan and Ohayo Ramen x Maki Bar chef as one of the best in Manila and even considering him family. Chef Tamura—who admits this to be his first time making tsukemen and collaborating with another chef—agrees, calling Mendez "friendly, knowledgeable, and studious." The special partnership has birthed the Ramen Ron x Mōdan Tsukemen Set, will be available only from August 18 to September 18, with servings are limited to 20 a day and going for P850 a pop.

The set has two parts. Representing the ramen part of the equation is a serving of Tori Gyokai Tsukemen, which has thick noodles and embellishments of chashu, menma (bamboo shoots), a ramen egg, and nori, plus a rich broth of pork, silky fowl, and bonito for dipping into. On the side you get steamed buns stuffed with Karai Karaage with Tsukemono, or spicy Japanese fried chicken and Japanese pickles (of cucumber, daikon, and onions) for crisp-crunchy contrast to the hot soup and chewy noodles. Needless to say—if Japanese flavor profiles are your jam (and why wouldn't it be)—this is one power pairing not to miss.

...And dip it into the concentrated broth before slurping away. (You can request for yaki-ishi, or a hot stone dropped into your soup, to reheat it should it get cold—and/or extra ukokkei broth to aid you in getting every last drop.)
