(SPOT.ph) There are a few things in the world that go by the old adage, "less is more," and cheese pizza is one of those things. At its core, it contains just two to three elements: a good crust, (optional) tomato sauce, and cheese. But it’s often the simplest things that are the hardest to get right—without any other extravagant toppings, there’s no hiding any mistakes or imperfections. And while we will argue that even bad pizza is good pizza, some pizzas just belong to the spotlight better than others.
What are the makings of a good cheese pizza, you ask? We ranked pies according to the quality (not quantity) of the cheese; the texture, taste, and thinness of the crust; the topping-crust ratio; and general gooeyness and flavor.
Among the standouts were Salvatore Cuomo & Bar’s Four Cheese, which has the right amount of char and a lovely blend of cheeses. Francesco’s Kitchen’s Tartufata ai Formaggi ranked high up as well, thanks to the extra depth contributed by the addition of truffle. Especially memorable, too, was Amare La Cucina’s Tre Formaggi, thanks to its oh-so-perfectly balanced flavor from three kinds of cheese.
