(SPOT.ph) There are a few things in life that immediately make any situation better: cute sneakers, cat videos, cheese on top of anything. While grating your choice of cheese over dishes is the popular way to go, those in the city of Lodi in Lombardy, Italy go a different route, using a special long knife over a giant cheese wheel to scrape long, silky ribbons that can then be consumed plain or used to top other dishes. Known as Raspadura, this way of serving Grana cheeses can be hard to come by outside its region of origin—but award-winning Italian spot a mano's bringing a slice (scrape?) of Lodi to our shores with the new Raspadura specials on their menu.

Raspadura specials and other new dishes at a mano

a mano brings the art of Raspadura to their menu with special dishes available at their three branches—Makati, BGC, and the recently opened outpost at Gateway 2. Upon serving, the a mano team shaves silky strips of Grana Padano from a giant cheese wheel right by your table, and drapes these delicate ribbons over your dish of choice: Chicken Salad (P550) with a drizzle of tangy-sweet aceto balsamico; Florentine-Style Steak (P5,000) grilled to your liking and served with arugula and a balsamic glaze; and Pizza con Raspadura (P700) with their signature crisp-chewy, puffy-edged, thin-centered crust.

Looking to change it up from your go-to's? a mano's also got new dishes on their roster worth adding to your order list: the Spaghetti Burro e Alici (P685) highlights the underrated tandem of butter (lots of it!) and anchovies, while the Risotto alla Marea takes a page from the famous fusilli dish of New York's Marea restaurant, being dotted with chunks of octopus and buttery bone marrow. And the Maritozzo makes a great argument for saving room for dessert; inside its airy brioche buns is your choice between Classic or Strawberry cream.
